These fruit roll-ups are easy to make and travel well—a definite win-win for your next road trip!
- Preheat oven to 175°F, and line two baking sheets with parchment paper.
- Puree mango in a blender until smooth. Strain and separate the puree between the two sheets, and spread flat.
- Bake the puree for 3–4 hours, until dry.
- Remove the roll-ups from the oven, place a piece of wax paper on top, and peel off the wax paper and roll-ups together. Cut the sheet into long strips, and roll up the strips.
