For those in the search of something different than your typical holiday ham, this stuffed salmon is sure to do the trick. Cranberries mixed with brie make this salmon dish truly delectable.
- Preheat the oven to 375°
- Slice each piece of salmon lengthwise through the middle, cutting about ¾ of the way through the fillet.
- In a skillet heated to medium, melt the butter. Add the onions, and stir until translucent. Add the garlic, and cook until fragrant. Combine the spinach and dried cranberries, and cook for an additional minute.
- Lay the salmon fillets on a piece of foil. Fill each fillet with the spinach mixture, top with a slice of Brie, and pinch together with your fingers.
- Wrap another piece of foil around the entire fillet, place the salmon pouches on a baking sheet, and bake in the oven for 20-25 minutes.
