Homemade creamed spinach is deliciously simple to make, and pairs with any roast, stuffing, or mash.
- Melt butter in a large skillet over medium-high heat. Saute the onion and garlic for 3 minutes or until tender and translucent. Stir in flour, creating a roux.
- Whisk in the Half & Half, and season with salt, pepper, and nutmeg. Bring to a simmer.
- Reduce heat to medium-low, and stir in the parmesan and spinach. Cover, and cook for 12–15 minutes or until spinach is tender and sauce has thickened slightly. Serve warm.
