No holiday meal is complete without mashed potatoes, but if you’re looking for a healthier alternative, try replacing the potatoes with cauliflower! The result is the same creamy texture you love, with less carbs and sugar.
1. Place the cauliflower florets in a steamer basket over boiling water, cover, and steam until very tender, about 12 to 15 minutes.
2. Place the cooked cauliflower in a large bowl. Add in the milk, sour cream, dill, butter, and salt. Use an immersion blender to mix until smooth.
3. Transfer to a bowl, and serve warm.
