Smoky, peppery Romesco sauce is blended with traditional ranch dressing, making an irresistible grill sauce for chicken. Brushed or dipped, it’s perfect for grilled drumsticks!
- Preheat grill to medium-high heat.
- Combine roasted peppers, tomatoes, olive oil, salt, almonds, sherry vinegar, paprika, and cayenne in a food processor, and blend until smooth.
- In a large bowl, whisk mayonnaise, sour cream, garlic powder, onion powder, and chives until smooth. Scrape in roasted pepper mixture, and whisk until blended. Keep refrigerated until ready to grill.
- Brush drumsticks with dressing, and grill for 10 minutes or until chicken is completely cooked, turning and basting frequently. Let rest for 5 minutes before serving.
Tip: This sauce is so good that you’ll want to make extra—it’s perfect on salads, vegetables, meat, bread … you name it.
