Summer Smash Burgers
Give classic grilled burgers an upgrade with this smash-style preparation and a special sauce that has just the right amount of zest.

Instructions:
- In a medium bowl, whisk together the special-sauce ingredients. Keep refrigerated until ready to serve.

- Preheat the grill to medium-high heat, and place a cast-iron skillet or griddle on top of it.
- Portion the ground beef into 4-ounce round balls, and season with the salt.

- Place the beef balls on the hot skillet or griddle, and press down on each using a metal spatula until smashed. Grill the burgers, flipping once, for 4–5 minutes or until seared and cooked to desired doneness. Top with American cheese before removing from the grill.

- Spread the special sauce on the burger buns, and add the burgers and any desired toppings.

Tip: This special sauce is so special that you may want to make more. It will keep in the refrigerator for 1 week.
