Homemade hush puppies with a twist—mixed into the batter are crushed pimento cheese potato chips. Fried crispy and just ready for butter!
Makes 1 dozen
- Preheat oil in a fryer or dutch oven to 350°F.
- In an bowl, combine cornmeal, crushed chips, flour, baking powder, and salt until blended. Add in onion, eggs, and buttermilk, and whisk until smooth.
- Scoop batter, and gently drop into the fryer. Fry for 3–4 minutes or until hush puppies are golden brown and cooked thoroughly.
- Let drain on a paper towel or wire rack until ready to serve.
