Flavor-Packed Roasted Pumpkin Seeds
If carving a jack-o’-lantern is on your agenda this season, make sure you put those seeds to good use. From savory to sweet, these flavor combinations will make pumpkin seeds seem less like a nuisance, and more like a favorite snack!
Breadstick
- 1 teaspoon olive oil
- 1 teaspoon grated Parmesan cheese
- ½ teaspoon basil
- ½ teaspoon oregano
- ¼ teaspoon sea salt
- ⅛ teaspoon garlic powder
Maple Spice
- 1 teaspoon olive oil
- 2 tablespoons pure maple syrup
- 1½ teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon fine salt
Dill Pickle
- 1 teaspoon olive oil
- 1 teaspoon white vinegar
- 1 teaspoon dill
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- ⅛ teaspoon black pepper
Cinnamon-Sugar
- 1 tablespoon butter
- ½ teaspoon cinnamon
- 1 tablespoon brown sugar
- Pinch of salt
Cup of Joe
- 1 tablespoon butter, melted
- 2 tablespoons brown sugar
- 1½ tablespoons espresso powder
For all of the savory flavors (breadstick, maple spice, and dill pickle), coat the seeds with olive oil, sprinkle the seasoning, and bake on a parchment-lined baking sheet at 300°F for 20–30 minutes. For the sweet flavors (cinnamon-sugar and cup of joe), coat with melted butter instead of olive oil before baking.
