Summer Smash Burgers

Give classic grilled burgers an upgrade with this smash-style preparation and a special sauce that has just the right amount of zest.

Instructions:

  1. In a medium bowl, whisk together the special-sauce ingredients. Keep refrigerated until ready to serve.

  2. Preheat the grill to medium-high heat, and place a cast-iron skillet or griddle on top of it.
  3. Portion the ground beef into 4-ounce round balls, and season with the salt.

  4. Place the beef balls on the hot skillet or griddle, and press down on each using a metal spatula until smashed. Grill the burgers, flipping once, for 4–5 minutes or until seared and cooked to desired doneness. Top with American cheese before removing from the grill.

  5. Spread the special sauce on the burger buns, and add the burgers and any desired toppings.

Tip: This special sauce is so special that you may want to make more. It will keep in the refrigerator for 1 week.
