- Start by cutting the chicken into ½-inch cubes, and place them into a mixing bowl. Slice the lemons in half, and squeeze the juice over the chicken.
- Cut the avocados in half. Scoop out the insides, and place the insides into the same bowl. Mash the avocado with a spoon, and stir until it is evenly spread. Add olive oil, black pepper, and salt, and stir well to combine.
- Prepare the sandwiches by scooping a portion of the chicken salad onto a bun. Add a slice of tomato, a piece of American cheese, and a few leaves of spring mix for garnish.
