An instant crowd-pleaser, this variation on the classic pigs in a blanket recipe features chorizo sausage and lightly seasoned puff pastry that’s perfect with a cheesy dip.
- Preheat the oven to 350°F.
- Place puff pastry on a floured surface, and cut the sheet into quarters. Roll each chorizo sausage in puff pastry, and seal the seam with egg wash.
- Cut the wrapped chorizos into bite-sized slices, and brush with egg wash. Arrange the slices ½ an inch apart on a greased baking sheet, and season each with taco seasoning, if desired.
- Bake for 30–40 minutes or until golden brown. Let rest for 5 minutes, garnish with chopped cilantro, and serve with warm queso dip.
Tip: You can spice up these chorizo pigs in a blanket even more with a sprinkle of taco seasoning.
