Chorizo Skillet Queso Fundido
The queso dip to rival all queso dips—with everything but the kitchen sink! This ooey-gooey queso fundido is filled with spicy chorizo, poblano peppers, and three types of cheeses. Feel free to add any additional Mexican ingredients to suit your taste.

Instructions:
- Heat oil in a large cast iron skillet over medium-high heat. Sauté onions, garlic, and peppers for 2 minutes. Crumble in the sausage, and continue to sauté for 5 minutes or until sausage is cooked completely.
- In a large bowl, toss flour with cheddar and monterey jack, until coated.
- Pour beer into the skillet to deglaze, making sure to scrape the bottom of the pan to get all the tasty brown bits. Whisk in cheese, a handful at a time, until melted and smooth. Reduce heat to low, and allow to simmer for 5 minutes, stirring frequently.
- When ready to serve, top hot (and still simmering) queso with tomatoes, onion, queso fresco cheese, and cilantro. Serve with tortilla chips for dipping.
Tip: Queso fundido is best served right out of the pan, and immediately (while it is still bubbling a bit). This makes a great appetizer; serve with as many Mexican condiments as you’d like for guests to DIY their dip.
