Sometimes you don’t want a meal that is too filling when you’re outside in the sun, which is where these light finger sandwiches come into play.
- With a hand mixer, mix together the cream cheese and mayonnaise in a small bowl until smooth. Stir in herbs, salt, and pepper.
- Chop the salmon into small pieces and mix into the cheese mixture with a spoon, being careful not to overmix. Spread onto slices of bread.
- Layer cucumbers over the bread, and cover with a second slice of bread. Cut into diagonal sandwiches.
