Stuffed Meatballs with Grilled Hoagie Toast
Jazz up your back-to-school lunches with these cheesy, stuffed meatballs. Simple grilled hoagie toasts add a nice smoky crunch to sop up all the deliciousness.

Instructions:
- In a large bowl, mix together ground beef, garlic, onion, bread crumbs, eggs, salt, and pepper until combined. Form into 12 even balls, and flatten. Stuff with cheeses, and roll into a ball, covering the cheese completely.
- In a large skillet, heat oil over medium-high heat, and gently sear the meatballs on all sides. Pour in marinara sauce, and cover. Cook for 10–12 minutes or until meatballs are cooked completely.
- Preheat grill or stove top griddle to medium-high heat. Brush hoagie roll slices with oil, and grill until slightly charred.
- Serve meatballs with toasts, shredded Parmesan cheese, and chopped basil.
Tip: If your brown bagging this fun lunch, pack the meatballs separate from the toasts to keep them from getting soggy.
