Cheesy Candy Corn
Candy corn is a beloved Halloween treat, but doesn’t make for the most filling meal. Try this recipe for quesadillas that look just like the orange, white, and yellow striped candies for a spooky snack your guests will gobble up!

- In a large pot, combine the chicken, salsa, corn, barbecue sauce, and cumin until heated through, stirring occasionally. Place a pat of butter in a heated pan, and let melt.
- Place one tortilla in the heated pan, and then spread evenly with 1 cup of the chicken mixture. Fold the tortilla over and press down. Cook over medium heat 1-2 minutes, or until golden brown, then flip to cook the other side.
- Spread ½ cup of the queso dip over the quesadilla, and carefully sprinkle cheese along the outer edge. Cook, covered, 1–2 minutes or until cheese is melted.
- Remove to a cutting board, and sprinkle crushed chips over the queso dip. Cut the quesadilla into six wedges, and place a small dollop of sour cream at the point of each wedge. Repeat with remaining ingredients.
